Description
The aim of the project is to develop innovative technology for enrichment of food products naturally metabolized and biologically active selenium compounds. The product is a dietary supplement in the form of selenium compounds enriched in natural selenium. Envisaged technology will be a breakthrough in the production of bio – food products of the desired features of a pro-health. Product lies in a process for supplementing a food in a seleno – amino acids in which the active substances are produced naturally by plants grown under suitable conditions.

Today, great importance is attached to the production of functional foods, ie one that favorably affects the functioning of the human body by improving health and reducing the risk of various diseases. Commonly used preparations known as “dietary supplements” including the most simple chemical elements that are considered desirable from the standpoint of human health. It is known that the interaction of many elements depends not so much on their total concentration, but primarily on the chemical form in which they are introduced into the body. For this reason, in many cases present in the formulations components they are not absorbed by the body.

The aim of this project is to develop a procedure for food fortification with the necessary biologically active ingredients through their metabolism to the desired chemical forms by living organisms.

An important issue is the form in which selenium should be administered. For this reason, the body absorbs more selenobiałka from inorganic forms of selenium, it is extremely important to identify and to determine the concentration of the various selenium compounds in the resulting food product.

The aim of the work will determine the speciation of selenium (molecular profile) in chicken eggs raised under special conditions and fed with feed rich in selenium. For this purpose will be developed composition of compound feed and a detailed nutritional plan of the egg-laying hens. Studies are also in the group of control animals (fed in a conventional manner) in order to observe any differences in the two groups of eggs.

In order to determine the effectiveness of selenium accumulation in eggs will be marked with the contents of the various parts of the egg. For this purpose, the method of mass spectrometry inductively coupled plasma (ICP-MS) for the detection limit of selenium in the order of 0,200 mg / kg.

The next stage of research will be to determine the form in which selenium is accumulated in the chicken eggs. To this end, the extractions are using different kinds of media, eg. Water, sodium hydroxide, hydrochloric acid, enzyme, surfactant. Speciation of selenium, which determine at what forms present in the food product selenium in the individual fractions is carried out using a high performance liquid chromatography (HPLC) coupled with a highly sensitive detector (ICP-MS). Implementation of the project RTD in the research part will include the following steps:

Developing composition and manufacturing procedure of the final product
The cooperation of the applicant during the implementation of the tasks associated with conducting the research will be carried out on the basis of a consortium with the Institute of Technology – Life Sciences.

As part of implementation will be purchased machines for the production of a dietary supplement. Farm Oldar plans to purchase modern and technologically advanced machines for the production of biscuits enriched with selenium component. This task will be purchased the following devices:

pasteurizer with punching,
rotary kiln,
Device for making pulp into cakes.
The project will also be purchased fully equipped and fulfills all safety standards production hall with equipment that allows to carry out part of the implementation by the installation of the machines purchased and commencement of production of goods enriched with natural bioavailable selenium.
